Meyer Lemon Mousse Pie, celebrity guest ^^

Meyer Lemons: The Meyer lemon (Citrus × meyeri) is a citrus fruit, native to China, thought to be a cross between a true lemon and a mandarin orange or sweet orange.



Imagine my surprise when shopping for groceries, I found Meyer lemons. I was gobsmacked . Meyer lemons in D-ville? Where am I ? OZ? I must purchase , and bake. NOW!

I vacillated -->Bavarian, chiffon, or mousse?

Definitions:

French word mousse means "foam".

Fruit Mousse is usually composed of a base, ( curd) an egg foam, ( egg whites) whipped cream, and a setting agent ( gelatin)

Curd: This cooked mixture of lemon juice (and sometimes grated zest), sugar, butter and egg yolks .

A mousse can be made with a simple egg foam or a Italian meringue.

Italian Meringue: made by beating egg whites to stiff peaks then pouring hot sugar thru the meringue


Meyer Lemon Mousse Pie

Ingredients


1 packet unflavored gelatin
1/4 cup cold water
4 eggs, separated
1 cup sugar
1/2 cup fresh lemon juice
1/2 teaspoon salt
2 T fresh lemon zest ( or less)
2 cups heavy whipping cream

Directions

CURD: Soften (bloom) unflavored gelatin in 1/4 cup cold water. Set aside. Beat yolks until thick and lemon colored. Gradually add 1/2 cup sugar, lemon juice, and salt. Cook over double boiler stirring constantly, @10 mins. Should be thick and coat back of spoon.
Remove from heat. Stir in gelatin and lemon zest. Strain thru seive. Let cool.

Meringue: Whip egg whites to soft peaks, then slowly add 1/2 cup sugar, and continue beating. Medium peaks and glossy. Make sure bowl and whip is very clean with no moisture. ( You can wipe bowl and whip with White vinegar. Removes any residue.)

Whip heavy cream to full whipped cream- keep cold.

Using whisk gently whip in meringue to curd lemon mixture.

Fold whipped cream in a 2 step process. Whisk 1/4 cream into meringue/ lemon mixture . Then gently fold in remaining cream with a spatula. When no streaks of cream can be seen, mousse is ready for pouring.

Pour into favorite 9 inch pie crust. ( I used my antique spring foam, with graham cracker crust) and chill until set.

  2. This looks wonderful. I wanted to answer your question ASAP. The crystallized sugar can be found with other sugars in major grocery chains. I use an ordinary iron, but do not completely fill it for the Leige waffles. Have a great day. Blessings...Mary
