I live in the south. Georgia, to be specific. We had a snow storm, LAST Monday. Highly unusual. It is cold. It is icy. School is out. I feel exhausted, and I start back to work on THIS Monday. I need a break . I crave heat, sun, and warm weather .
How about a little taste of Brazil?

I can taste Brazil in my mouth. LOL.
Nice light spice. Back notes of molasses, and lemon. Tastes like of a ginger snap cookie vs. the heat of a ginger bread.
Carioca
adapted from Brazilian Cookery by Margarette De Andrade
Ingredients
1/2 Cup Butter
1/2 Cup Brown Sugar
4 large Eggs — Separate Out Yolks/Whites
1/2 Teaspoon Ginger
1 Teaspoon Cinnamon
1 Teaspoon Mace
2 Tablespoons Lemon Juice
1/2 Cup Brown Sugar

1 Teaspoon Mace
2 Tablespoons Lemon Juice
zest of one lemon
2 1/4 Cups All-Purpose Flour
1/2 Teaspoon Salt
1 Tablespoon Baking Powder
1 Cup Stout Beer — Room Temperature
3/4 Cup Molasses
2 1/4 Cups All-Purpose Flour
1/2 Teaspoon Salt
1 Tablespoon Baking Powder
1 Cup Stout Beer — Room Temperature
3/4 Cup Molasses
1 Teaspoon Baking Soda
Directions:
Pre heat oven to 350 degree F
Whip 4 egg whites until they hold firm but not dry stiff peaks. Reserve.
Cream together the butter, sugar until combined.
Add egg yolks, lemon zest, Blend well.
Sift together flour, salt, baking powder, baking soda, ginger, cinnamon, mace ( dry ingredients ) in a separate bowl.
Add beer, molasses, lemon juice to the dry ingredients.
Add mixed dry/beer ingredients into the creamed butter/egg mixture . Beat until combined.
Fold in stiffly beaten egg whites.
Pour into two, greased, 9 inch cake pans.

ReplyDeleteI'm Brazilian but temporarily living in South Korea. What a beautiful tribute to my city, Rio de Janeiro. I'm in Korea right now, but have just returned from Rio... oh my, it was steaming hot there!! I'd love to try Carioca. By the way, just in case you don't know, "Carioca" is the name given to a person who was born in Rio. I'm Carioca ;o)
ReplyDeleteI had to look up MACE, I didn't know what it was. I found out it's another part of the nutmeg. I've never seen that in Brazil but we do use nutmeg quite often.
